What a great experience it was to have HOLA Living visit us here at the Yela Mill! It was like a dream come true, just imagine! I got so excited telling you about this magical place and sharing one of my favorite recipes: focaccia with lavender.

The truth is that this mill, with its 150 years of history, has a special charm that simply catches you. It is located in the region of La Alcarria, in Guadalajara, and since I renovated it, it has become a unique space where I offer my famous sensory journeys. Here, between nature, poetry and magic, everything comes to life. And the ingredients I use, such as the tomatoes from my plantations and the lavender that floods the fields, are the undisputed protagonists of my dishes.

When it comes to cooking, I always try to incorporate the beauty and flavor of nature into my recipes. Focaccia with lavender is a perfect example of that. And it was great to share the recipe with HOLA Living and now with you.

To make this delicacy, you need warm water, dry yeast, virgin olive oil, lavender honey from La Alcarria, salt and strong flour. Mix all the ingredients (except the flour), then add the flour and knead well. Let the dough rest and then place it in a mold, flatten it and make some holes in it. Then, a touch of olive oil and fleur de sel from Mallorca, and bake in the oven. The aroma coming out of that focaccia as it bakes is simply amazing!

And when you take it out of the oven, I assure you that it will be hard to resist trying it. It’s a delight! After that, just let it cool a little and enjoy it. It’s perfect for a special winter dinner, I assure you.
